Quick fix Vegan Pasta made in Almond sauce!

White sauce pasta is yummy but unhealthy and I am not a big fan of red sauce pasta. So yes, that leaves me in a soup! So I have made peace with myself and only succumb to making vegetable pasta salad with no sauce. Here is the proof - Wholewheat Spaghetti with VeggiesEdamame and Mushroom Pasta salad and Pink Spaghetti with veggies.

Oriental Egg Fried Rice

It was my husband's birthday and he declared that we celebrate it for the whole week. By celebrate, he meant, I cook all his favorite dishes through the week! :)
So in the list was - Chinese fried rice and Egg Biryani. Since I had already made Egg Biryani recently, I chose to mix up his wish and make an Oriental Egg Fried Rice instead! Win Win situation for both of us. Since this was something new for my blog as well. ;)
It is a running joke in my home these days that I only cook for my blog. Since I do not like to repeat my dishes as it doesn't offer anything new for my blog.

This is really a fusion dish. I mean, it has something from every cuisine. The black beans which are widely used in American foods, the hummus which is Mediterranean, pasta sauce from Italy and Indian spices! This is one of my creations and I am very satisfied with the result.

Don't we all just love the color Pink!!! It's a gorgeous color after all. As a child too, I couldn't resist this color. I wanted everything to be pink. In fact I even dreamt of having Pink noodles someday. Finally I fulfilled my childhood wish and made these super healthy pink Spaghetti loaded with veggies.

Well, I am a sucker for noodles. Be it Maggi or the regular chilly garlic noodles. I love them all. Hence I wanted to remake my chilly garlic noodles using spaghetti. Usually I use the egg noodles to make it, however this time I tried using the whole wheat spaghetti and was very content with the end result. It was not only healthy but also tasty. I tried to keep it as healthy as possible by using lot of veggies and less oil. You can also use any other kind of pasta instead to make this dish.

Me and my husband occasionally enjoy a meal at Chipotle. However it never occurred to me to try their dish at home. While doing our grocery shopping last week, when I noticed these kidney beans. So i decided to get them but was in no mood to make the regular rajma chawal. That is when my husband suggested to make Burrito bowls. Thanks to him, that is what I made and was not disappointed at all. :)

Edamame & Mushroom Pasta Salad

I love Pasta! It comes in different shapes and sizes, most veggies go with it and you get healthy versions of it too. So at-least one is not guilty of enjoying it. I usually include this in my diet once a fortnight. I add many veggies to it like broccoli, green peas, shallots, baby corn, capsicum and so on. The recipe I am sharing with you today is a salad using Edamame and Mushrooms. Edamame is not only very rich in protein but it also tastes very good. You can add them in any rice dish or a paratha dough. They blend well. Now coming back to this recipe, it is very easy to make and is ready in a jiffy. After all this dish doesn't involve much chopping.. :)

Have been wanting to try falafel for a long time now. I was initially planning to bake these falafels but my husband suggested that we try using the appe pan instead. I mean after all it is so much easier than baking for me! So this turned out healthy as expected.

I by mistake soaked an entire packet of kidney beans only to realize much later that it was too much. I made the usual rajma sabzi with half of it but I really wanted some ideas on what to do with the remaining. So I decided to ask my friends from a foodie group on Facebook. I was overwhelmed with the responses I got, it opened up so many options & I wanted to try each one out. However I decided to try the falafel recipe. I know that usually its made from chick pea but as suggested by a friend on that group, I alternated chick pea to kidney beans.I took reference from her recipe & tried to create something new of my own. I am naming it Black Bean Soft Taco.
